Super easy rabbit roast

Line bottom of roasting pan with potatoes, carrots, celery, onion and any other favorite vegetables

Rinse, dry and cut up rabbit (if desired, you can also roast them whole).  Typically, rabbit is cut up into 7 sections: front legs, hind legs, saddle is cut into half (along spine) and the breast is left together.

Dust rabbit with pepper and/or your favorite herb. I like basil.  Top rabbit with bacon, if desired.

Cook @ 350 degrees for one hour.  Baste often.
