  • To make these I take some flour tortilla shells (homemade or storebought, homemade recipe is on this site if you’re interested), some shredded cooked chicken (usually leftovers from a roasted chicken), shredded cheddar cheese, some mild salsa and melted butter. Grease a cookie sheet with the melted butter, and layer chicken, salsa and cheese (in that order) on a tortilla shell and put another one on top. Brush the tops with butter and bake in a 425 degree oven for 5-7 minutes.

    Simple, quick, and yum. Can be frozen (unbaked).

  • This soup is often called for in recipes, and for good reason - it adds a nice taste and creamy texture to meals. But have you taken a second to read the list of ingredients? Just like any other canned creation, it has many ingredients that are not great for us. Making this from scratch, and freezing extra batches, will save you money and make a healthier soup for your meals.

    This recipe makes 1 can of soup.

    1 1/2 cup chicken broth
    1/2 tsp. poultry seasoning (see recipe on this site to make your own)
    1/4 tsp. onion powder
    1/4 tsp garlic powder
    1/8 tsp. pepper
    1/4 tsp. salt
    1/4 tsp. parsley
    dash paprika
    1 1/2 cup milk
    3/4 c flour

    Combine chicken broth, 1/2 cup of milk and seasonings. Bring to a boil. Meanwhile whisk remaining milk and flour (add the flour to the milk as you’re whisking to prevent clumps). When the broth is boiling, add this milk/flour mixture and whisk. Cook until mixture is bubbly and thick.

  • Pair this up with some warm pita and the garlic paste recipe found on this blog under ‘dips’ and this makes for an awesome meal.  Spread some of the garlic paste on pita bread, add the shish tawook and rice and you’re good to go!

    4 boneless/skinless chicken breasts, cubed
    Juice of 2 lemons
    1/4 C. EVOO
    2 cloves of garlic, minced
    2 Tbsp chopped parsley
    1 Tsp oregano
    Salt & Pepper to taste

    Combine all ingredients and marinate chicken for at least an hour.  Put the chicken on kabob sticks and grill until cooked through.

    Remove from sticks and eat with buttered rice, garlic paste and pita.  These are great made as a wrap with the pita and garlic paste, or you can eat just the chicken and rice with whatever sides you fancy.
